Preserving Isn’t for Jar Only

 


My garden has been bursting with veggies lately and my husband and I can’t keep up! To make sure nothing goes to waste I have begun to freeze some of my goodies so that we can enjoy them in the future.
The art of preserving food isn’t limited to just canning; freezing is another method of preserving which has been used for centuries, and it’s a method I use often.

      That is stuffed Eggplant. I used my garlic, onions, bell pepper, basil, parsley and tomatoes from my garden. It was delicious. I’m glad I have a few in the freezer for the future. Hope you are well.

  1. Doing well. Thank you! sounds yummy! I have mini patio eggplants growing in pots…no room for a garden, sadly. But looking forward to them and bet I could stuff them! did you put any grains in? What kind of cheese?
